Ukrainian borscht is not only a cult dish that forms part of UNESCO’s Intangible Cultural Heritage, but a genuine philosophy of flavour that brings generations together. Every region guards its own culinary secrets – from the special blend of spices to the exact order in which the ingredients are added to the pot. A proper borscht must be hearty, creamy and perfectly balanced between sweet and sour. Its faithful companion: golden-brown, fluffy pampushki with an aromatic garlic dressing.
